In light of recent concerns about hantavirus, but more importantly, the outbreaks of measles popping up because the antivaxxer movement is growing, I am wondering, what, as an adult can I do day to day to ensure that my immune system is safe from any wanton disease (to the extent it can be). Any checkups that are beneficial that I may be missing?

More broadly if you're sexually active with at least semi regularly changing partners, it might make sense to get tested for STIs. Many infectious diseases are symptomatic, but HIV and some other STIs can infect you with little symptoms and make you infectious to others for years.

You can probably get a booster of the MMR vaccine. Ask your doctor, or a nearby vaccination center.

We get a campaign for an extra dose of MMR here in Argentina every ~5 years, sometimes announced to protect small kids against Measles, sometimes announced to protect pregnant women against Rubella.

A few years ago, I got yet another extra shot when I went with my daughter for her vaccines.
